Minecraft Dungeons is OK. It's just really barebones. I played partway into the second difficulty and put it down, likely permanently. The fun is in finding gear with powerful enchants, but it's not enough.
I do think it has an edge on the snowblind engine games, though. Those are almost as shallow mechanically, but their progression is much slower, as I found out recently when I tried to play Champions of Norrath.
Best weapons I found:
Sacrificial dagger's (the wavey ones) with the enchant that procs a small tornado on the last hit of a combo. Those daggers only have a single forward thrust which counts as a 1-hit combo, so every time you stab, a tornado comes out. The range is limited, but it was good enough to allow me to do missions well above my power level.
Another that was really good was a crossbow with the infinity enchant. Upgraded to lvl 3, you have a 47% (?) chance to not use up an arrow. This counts for special attack projectiles as well, so occasionally you can fire the firework two, three or maybe even four times in a row.
There's likely a lot more good combos like these, but I couldn't be bothered to find out.
